Our Birds

To keep things simple we have designated three categories of chicken growth rate; fast, which is a five pound chicken in less than 50 days on a normal ration, medium, which is 70 to 100 days of age, and slow, which is 100 to 120 days old. An example of a fast growth chicken would be a white commercial broiler while a slow growth would be a Poulet de Bresse. We have chosen to put our broilers in the middle growth category because taste and texture develop at ten weeks of age and older but we don’t feel that a 105 day old chicken is that much better than an 80 day old chicken. Frankly, we are not patient enough to wait that long. Now, if you have been buying putative red broiler chicks from one of the large commercial hatcheries, you are probably buying a version of either a New Hampshire or Rhode Island Red. These are really table egg birds. Their growth curves and final weights are respectively much slower with a much lower finished weight than our products.
